Strawberry chia pudding is a very delicious and versatile recipe. You can add any kind of dairy free or regular milk. Add any sweeteners of your choice like agave syrup, maple syrup, or honey according to your dietary needs. Makes it the perfect recipe for those who follow vegan, gluten free, and dairy free diets. You can easily use any type of berries or mixed berries in this recipe. Top the strawberry pudding with your favorite topping – granola, pumpkin seeds, almonds, or coconut.

When chia seeds are mixed with the liquid, they gels up into a thick pudding like consistency. Chia seeds absorb the liquid and expand into a gel-like substance. The best chia seeds to liquid ratio is 1:4 – This means for each 1 tbsp chia seeds, you need ¼ cup of milk, or for every ¼ cup of chia seeds, you will need 1 cup of milk.

Ingredients

  • Chia seeds
  • Almond milk
  • Strawberries
  • Vanilla extract
  • Honey 

Strawberry Chia Pudding Step By Step Recipe

In a blending jar, add the chopped strawberries, honey, vanilla extract, and almond milk. Blend everything until it becomes smooth. 

In a medium size bowl, transfer the chia seeds, add blended mixture to the bowl, and mix everything well with a spoon. 

Cover and refrigerate the pudding for 2 hours, mix the mixture one more time, and chill it for 4 more hours (overnight) for that perfectly thick and creamy pudding. 

Place some strawberry slices on the side of a serving cup. With the help of a spoon, transfer and divide the pudding to the serving cups. Garnish with a whole strawberry or chopped strawberry, blueberry or mixed berries, and serve.

Tips For Making Strawberry Chia Pudding

  • The best chia seeds to liquid ratio is 1:4 – This means for each 1 tbsp chia seeds, you need ¼ cup of milk, or for every ¼ cup of chia seeds, you will need 1 cup of milk. 
  • Once you set the chia pudding in the refrigerator, stir the pudding after 2 hours to mix them well with the liquid. 
  • You can check the pudding consistency after 4 hours. If you add more liquid by mistake or find the pudding is too runny then add 1-2 tbsp of chia seeds and mix well. Soak them for a couple of more hours and adjust the sweetness.

Variations

I have used fresh strawberries in the recipe, you can use frozen ones as well.

You may add some cinnamon powder or lemon zest for flavoring or simply skip it. 

Use any kind of a sweetener in the recipe like maple syrup, agave syrup, regular sugar, or coconut sugar. Adjust the sweetness according to your taste.

Any kind of milk will go perfectly with this recipe according to your dietary needs – coconut milk, soy milk, oat milk, or regular milk. 

Any type of berries or mixed berries will be added in the chia pudding.
