For Poha
- 4 cup Poha thin
- 1 medium Red onion chopped
- 1/2 cup Cilantro chopped
- 3-4 Green chillies finely chopped
- 1 tbsp Lime juice
- 1 cup Coconut grated
- 1/2 cup Coconut water
- 1 tsp Salt or as required
- 1/2 tsp Sugar
For Tempering
- 1 tbsp Oil
- 1 tsp Mustard seeds
- 1/2 tsp Cumin seeds
For Topping Options
- 1 Roasted papad
- 1 Fried papad
- 1 Khakhra
- 4 tbsp Sev thin
- 6 Crispy poori
- 1/2 cup Pomegranate seeds
- 1/2 cup Moong sprouts
For the Poha
Pass the poha through a sieve to separate most of the powder and keep aside.
In a large mixing bowl, add chopped onions, green chilies, cilantro, fresh coconut, lime juice, salt, and sugar.
Transfer the poha to the bowl, sprinkle some coconut water, and mix everything well.
Place a plate over the bowl and keep some weight on the plate - like a pestle and mortar for 15-20 minutes.
For the Tempering
In a tempering pan, add some oil and raw peanuts, frying them for 4-5 minutes or until lightly browned. Place them aside.
In the same tempering pan, add mustard seeds and let them crackle.
Add cumin seeds and let them crackle, switch off the heat, and keep aside to cool down.
Transfer the tempering to the mixing bowl, add half of the peanuts, and gently mix the poha well.
Divide the poha into the serving bowl, sprinkle some cilantro leaves, thin sev, peanuts, pomegranate seeds, and serve.
- For the best tasting dish, do not add thick poha in the recipe. Thin poha will absorb all the juices well and make the final dish soft and delicious.
- Do not make the dish very spicy by adding too many green chillies. It should be mildly spicy, sweet, and tangy.
- Use freshly grated coconut and coconut water for making the dish. You can buy a frozen grated coconut for this recipe. Make sure to thaw the coconut very well. You can buy a box of pure coconut water from the store for soaking the poha.
