Baked Tofu
- 12 oz Tofu extra firm
- 1.5 tsp Cornstarch
- 1 tsp Olive oil
Tofu Marinade
- 1/2 tsp Red chili powder
- 1/4 tsp Onion powder
- 1/4 tsp Garlic powder
- 1 tbsp Lime juice
- 1/4 tsp Salt
- 1 tbsp Olive oil
Fajita Veggies
- 1 medium Red onion cut into slices
- 1 large Red bell pepper cut into slices
- 1/2 large Orange bell pepper cut into slices
- 1/2 large Yellow bell pepper cut into slices
- 2 tbsp Cilantro garnishing
- 1/2 tsp Paprika
- 1/4 tsp Red chili powder
- 1/2 tsp Cumin powder
- 1/2 tsp Oregano dried
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1/4 tsp Salt
- 2 tsp Olive oil
Yogurt Sauce
- 1/2 cup Yogurt
- 1/4 tsp Cumin powder
- 1/4 tsp Black pepper powder freshly ground
- 1/8 tsp Salt
Toppings Options
- 1/2 cup Hummus/Refried beans
- 1 cup Greens
- 1/2 cup Cheese shredded
- 1/2 cup Yogurt sauce/Sour cream
- 1/2 cup Guacamole/Salsa
- 8 medium Tortillas
Pressing The Tofu
Take one block of tofu and wrap it in a paper towel or a kitchen towel and sandwich it between two plates, keep some heavy object on the top for 20 minutes - I have used an iron skillet and a heavy food packet.
Remove as much water as possible by pressing the tofu and slice it into thin stripes.
Roasting The Tofu
Sprinkle some cornstarch over the tofu slices and toss everything together.
In a small bowl, mix together the tofu marinade ingredients, and toss it with tofu. Let the tofu sit for 10-15 minutes.
Line a baking tray with parchment paper, brush 1 tsp oil, and set it aside.
Preheat the oven to 400℉/200℃
Place the marinated tofu in the prepared baking tray by spacing between them.
Roast the tofu slices for 20 minutes, flip them with a spatula, and cook for 10 more minutes from the other side.
Fajita Veggies
Heat some oil in the skillet on medium heat, add sliced onions, and sauté for 3-4 minutes.
Transfer the sliced mixed bell peppers and sauté for 3 minutes.
Turn off the stove and combine all the fajita veggies spices.
Next, combine the roasted crunchy tofu slices to the fajita veggies.
Garnish the dish with some cilantro.
- Using extra firm tofu is very important to retain its shape in the recipe and make the tofu crispy.
- Pressing the tofu with some heavy object helps to take away all the moisture quickly from the tofu.
- When you are making these tofu fajitas, slicing the tofu into stripes helps them to roast perfectly crispy.
