Masala Milk - Masala Doodh

Masala milk is a very delicious sweetened milk, flavored with masala milk powder. Masala milk powder is made with almonds, cashew nuts, pistachios, nutmeg, saffron, and green cardamom.

Ingredients
  

  • 2 tbsp Almonds
  • 2 tbsp Pistachios
  • 2 tbsp Cashew nuts
  • 1 tsp Cardamom powder freshly ground
  • 1/4 tsp Nutmeg powder
  • 1 tsp Saffron strands
  • 500 ml Milk full fat, * see notes
  • 2 tbsp Sugar

Instructions
 

Masala Milk Powder

  • In a pan, add almonds, pistachios, and cashew nuts, roasting them for 2-3 minutes on low heat.  Set it aside to cool down completely.
  • Combine all the nuts into a chopper or food processor and make a coarse powder.
  • Add cardamom powder, nutmeg powder, and mix it well.
  • Combine some saffron, mix everything well, and store it into an airtight container until ready to use.

Masala Milk

  • In a heavy bottom pot, add some milk and heat it on medium low heat for about 5 minutes.
  • Once the milk is warm, add some sugar, masala milk powder, and boil the milk. Keep stirring occasionally. Add some more saffron strands if you wish or adjust the sugar at this point.
  • For the best tasting milk, let it sit for 2-3 minutes on low heat by stirring frequently, and serve. 

Notes

  • Slightly roasting the nuts is very important to remove the moisture from them, release the aroma from the nuts, and increase masala milk powder’s shelf life.
  • Make the masala milk powder in a smaller quantity to keep it nice and fresh.
  • This masala milk powder recipe makes around 12 servings of masala milk.
  • While grinding the nuts make sure to lightly pulse them. If you grind them on a high speed continuously, they will release natural oil and it will change the taste of the masala milk. I prefer using my mini chopper.
  • You can use any kind of dairy free milk of your choice for this recipe but full fat milk or 2% milk taste the best.
  • Use full fat milk for the best tasting masala milk and keep it on low heat once it's boiled. 
  • Add any sweetener of your choice or completely skip adding it. 
  • You may add more or less masala milk powder as per your preferences.
