Why Do We Need To Add Full Fat Thick Yogurt?

I have used homemade full fat hung curd in this recipe to control the iciness and increase the creaminess in the popsicles.

Don’t substitute low-fat yogurt as it will contain more water and will produce icier pops.

You can use store bought greek yogurt and use it directly in this recipe without hanging it.

If you buy a full fat yogurt – make sure to hang it in a muslin cloth for 1-2 hours to remove whey from it. You can hang the yogurt for a few hours in the refrigerator as well.

Why Do We Need To Add A Sweetener In This Recipe?

Honey or maple syrup adds creaminess and stability to frozen yogurts. They help to prevent frozen popsicles from developing large ice crystals once frozen. Sugar molecules break down water molecules during the freezing process. Small doses of these sweeteners, when used wisely, can help frozen sweets become creamier and more stable.

Add honey in the mixture, you can adjust it according to the taste of the puree at this point and blend everything well.

How To Remove Popsicles From The Mold?

Fill a cup or glass with warm water, set the popsicle mold into the cup (stick side up) for about 10 seconds. This will slightly warm the sides of the popsicles, allowing them to be removed easily.

You can gently rub the mold between your palms to create some warmth allowing the popsicles to be removed easily.
