How To Pick Fresh Asparagus? 

  • Look for asparagus stalks that are firmer to the touch and with a smooth texture.
  • It should be rich in the green color and softly fading to the white at the bottom of the stalk.
  • Select a bundle with the stalks which are uniform in the length and thickness.

How To Store Fresh Asparagus? 

  • Trim the bottom of the stalks and wrap only the cut ends with a wet paper towel. Store in a large plastic bag and place in the vegetable crisper of your refrigerator for 3-4 days.
  • If you want to store them for longer, place them in a heavy bottomed jar, add 1-2 inches of water, cover and tie with a large plastic bag, and store in your refrigerator. Change the water after every 2-3 days.

Oven Roasted Asparagus Step By Step Recipe

In a small bowl, add olive oil, garlic, chili flakes, pepper powder, oregano, lemon juice, and salt. Set aside for 10 minutes.

Preheat the oven to 425℉/220℃ and line a baking tray with aluminium foil or a parchment paper.

Wash the asparagus and trim off the tough and woody ends.

Toss prepared asparagus with the oil mixture on a prepared baking tray. Separate the asparagus for an even roasting in the same direction.

Spread the bread crumbs all over the asparagus and 3-4 lemon slices. Sprinkle some red chili powder if you like on the lemon slices. Bake them for 12 minutes. If the asparagus is pencil thin then it may take only 10 minutes and a thicker one will need 15-18 minutes.

Preparation

Sprinkle 2 tbsp of parmesan cheese and bake for another 2 minutes and serve.

  • You can skip adding breadcrumbs to the recipe for a gluten-free option.
  • Skip adding chopped garlic and add ½ tsp of garlic powder.
  • You can add a few tbsp of garlic butter as well to enhance the flavors.
  • Add mozzarella cheese and bake until the cheese melts and gets slightly golden, for about 2-3 minutes. You can broil it as well.
  • Skip adding cheese for a dairy-free oven roasted asparagus.

Store the leftovers in an airtight container for 4 days in the refrigerator. Reheat them in the oven before serving.
