Vegan Pan Fried Zucchini Bites

Pan Fried Zucchini Bites are one of the lip smacking vegan snack recipes. These are crispy on the outside, soft on the inside, and totally addicting. These pan fried zucchini bites are made with simple ingredients like chickpea flour, rice flour, semolina, and some spices. These are pan fried on a low flame to get that super crispness. Zucchini bites are easy to make and healthy snack recipes! You can serve these bites as a side dish, appetizer, or as a tea time snack with your favorite sauce or dip.

Pan Fried Zucchini Bites

This recipe is adapted from a Maharashtrian and Konkani dish called kaap. Kaap is similar to fritters. My mom used to make them with different vegetables like potatoes, eggplants, and yam. She always used semolina and rice flour in the mixture. 

Once, I wanted to finish the zucchinis in my fridge- giving birth to zucchini bites! I have made these zucchini bites with chickpea flour, rice flour, and semolina.

It is one of our family’s favorite dishes, made so many times in my kitchen and shared with my friends. It has become their favorites too. I promise, you will love it as well.

If you are on a gluten free diet, skip adding semolina to the mixture. I tried to make zucchini bites with only oats flour as well, it tasted equally delicious but not as crispy. Rice flour and semolina creates that magic to make them crispy. 

Ingredients

  • Zucchini(Large)
  • Chickpea flour/Besan
  • Rice flour
  • Semolina/Rawa 
  • Red chili powder
  • Turmeric powder
  • Salt
  • Oil

Pan Fried Zucchini Bites Step By Step Recipe

Rinse the zucchini well to remove the dirt and cut off both ends. 

To make slices, cut the zucchini diagonally with a knife at a 45 degree angle and about ¼ inch thickness.

In a bowl, add some water, soak the zucchini slices for 5 minutes, and discard the water.

Add chickpea flour, semolina, rice flour, salt, turmeric powder, and chili powder in a deep plate. Mix everything well. 

Coating zucchini bites

Evenly dredge and coat each slice with the chickpea flour mixture. Remove any excess flour and set aside.

Heat a griddle on a low flame and evenly spread 1 tsp of oil.

On a griddle, place the zucchini slices(about 15-20) and drizzle 1 tsp oil. Fry them on a low flame for about 5 minutes or until they turn golden brown.

Flip the zucchini slices with the help of a spoon and a butter knife. Fry the other side until crisp and golden brown.

Flip them one more time and cook for 1-2 minutes. Remove the slices and put them on a plate.

Place another batch of zucchini slices on a griddle and cook them the same way.

How To Store Pan Fried Zucchini Bites?

Pan fried zucchini bites taste best when served hot and fresh.

Store them in an airtight container for 4 days in the refrigerator. Heat them up on a griddle for 3-4 minutes from both sides before serving them.

You can reheat them in the oven (preheated to 300 degrees Fahrenheit) for 3 minutes from each side.

How To Serve Pan Fried Zucchini Bites?

Serve pan fried zucchini bites as a snack on their own or with your favorite sauce/dip.

Zucchini bites can be served as a side dish with simple dal-rice and khichadi.

Serve them as a side dish with some cooked quinoa and black eyed peas curry.

Notes

  • If you are on a gluten free diet, skip adding semolina to the mixture.
  • Rice flourand semolina make the zucchini bites crispy. Chickpea flour controls the moisture in the zucchini.
  • If you skip semolina don’t skip rice flour. Your zucchini bites won’t turn crispy if you skip both ingredients.
