Rinse the zucchini well to remove the dirt and cut off both ends.
To make slices, cut the zucchini diagonally with a knife at 45 degree angle and about ΒΌ inch thickness.
In a bowl, add some water, soak the zucchini slices for 5 minutes, and discard the water.
Add chickpea flour, semolina, rice flour, salt, turmeric powder, and chili powder in a deep plate. Mix everything well.
Evenly dredge and coat each slice with the the chickpea flour mixture. Remove any excess flour and set aside.
Heat a griddle on a low flame and evenly spread 1 tsp of oil.
On a griddle, place zucchini slices(about 15-20) and drizzle 1 tsp oil. Fry them on a low flame for about 5 minutes or until they turn golden brown.
Flip the zucchini slices with the help of a spoon and butter knife. Fry the other side until crisp and golden brown.
Flip them one more time and cook for 1-2 minutes. Remove the slices and put them on a plate.
Place another batch of zucchini slices on a griddle and cook them the same way.
