Slightly sweet and juicy carrots taste amazing with the flavors of crushed garlic, the sourness of tomatoes, and a few spices. Loads of mustard seeds and sesame seeds add some nutty flavor in the dish. Curry leaves and cilantro leaves give so much flavor as well as some pop of color to the dish! 

This is a healthy, quick, and easy recipe to prepare on busy weekdays. Sesame carrot fry will look so beautiful on your dinner table along with some dal and rice to lift your mood. Additionally, it is a vegan friendly dish and will be ready in under 15 minutes. 

Once, my cousin’s wife was chit chatting with me about carrot recipes and she told me that she makes Gajarachya Kacharya (sabzi) just like Batatyachya Kacharya. I immediately thought of trying out the recipe a couple of months ago. I made my own version of the recipe, sesame carrot fry, and everyone at home loved it. 

I relish carrots and buy a new bag once there are a few left in the fridge. I like to use them regularly in my daily meals in so many dishes. 

Sesame Carrot Fry

My husband bought a big bag of carrots from Costco last week for the 2 of us😐 Since then I have been cooking so many dishes with carrots. I guess he was hoping that I will make some Gajar Ka Halwa 🙂 

You can definitely play around with some ingredients. Add some spinach or methi leaves in the sabzi for a good dose of leafy green vegetables. Add some fresh coconut or crushed peanuts in the recipe for some amazing flavors. I will highly recommend not to skip curry leaves in the tempering as it tastes so amazing with the carrots.

  • Carrots
  • Curry leaves
  • Garlic
  • Cilantro
  • Tomato puree/Ketchup
  • Mustard seeds
  • Sesame seeds
  • Asafoetida
  • Turmeric powder
  • Red chili powder
  • Salt
  • Sugar
  • Oil

Sesame Carrot Fry Step By Step Recipe

Wash the carrots and peel them with a vegetable peeler. Cut ½ inch top and bottom part of the carrots and discard them. Next, cut the carrots into a thin disc shape and set aside. 

Heat 2 tsp oil in the pan over medium heat. Once the oil is hot, add mustard seeds and let them splutter. 

Next, add asafoetida, curry leaves, crushed garlic, and turmeric powder. 

Transfer the prepared carrots into the pan, mix, and cover the pan with a lid for about 1 minute. 

Remove the lid and add tomato puree/ketchup, red chili powder, salt, sugar, mix, and cook covered for 4-5 minutes or until carrots turn tender.   

Next, add some sesame seeds, cilantro leaves, cook uncovered for 2 minutes, and serve.

Tips For Making Sesame Carrot Fry 

  • Use long and equal sized carrots to form symmetrical shaped discs. 
  • Try to cut the carrots into thin discs so they will cook faster and evenly. 
  • If you are using tomato ketchup then add 1 tsp into the sabzi – it is more concentrated and on the sweeter side. 
  • Do not overcook the carrots for the best tasting recipe. 

Variations

  • Add some chopped spinach or fenugreek leaves in the recipe once the carrots are cooked halfway. Cook the fenugreek leaves for about 4-5 minutes or until the rawness from them is gone. 
  • You can add some fresh or dry grated coconut in the dish along with sesame seeds for an amazing flavor. 
  • Roasted crushed peanuts taste awesome in the sabzi – add 1-2 tbsp to give some crunchiness in the dish. 
  • You can skip on adding tomato puree or tomato ketchup in the sesame carrot fry. Add 1/2 tsp of lime juice along with some sesame seeds and cilantro leaves. 
  • Add a pinch of sugar to balance out the sourness of tomato puree or lime juice. 
  • You can skip crushed garlic in the recipe for some religious events. 

How To Store Sesame Carrot Fry?

Sesame carrot fry can be stored in the refrigerator for up to 4 days in an airtight container.

It can stay in the freezer for 2 months in an airtight freezer safe container. 

Let it sit on a countertop for 1-2 hours and warm it in the microwave for 3-4 minutes, stirring between or over a stovetop.

How To Serve Sesame Carrot Fry?

Enjoy sesame carrot fry with some roti or phulka. 

It goes really well with dal or Maharashtrian amti with some plain basmati rice.

You can pair sesame carrot fry as a side dish along with some jeera rice and spinach dal or methi dal for a comforting meal. 

Serve the sesame carrot fry as a side dish along with raita, pickle, dry garlic chutney, dal fry, and plain basmati rice to make a wholesome meal.
