Ingredients

  • 2 medium Carrots peeled, grated
  • 5-6 medium Red radishes grated
  • 2 tbsp Cilantro chopped
  • 2 medium Green chillies finely chopped
  • 1/2 cup Yogurt thick
  • 2 tbsp Peanuts roasted, crushed
  • 1/4 tsp Black pepper powder freshly ground
  • 1/3 tsp Sugar
  • 1/3 tsp Salt

Instructions

  • Grate red radish, add a pinch of salt, and let it sit aside for 10 minutes.
  • Squeeze out the water from the radish and transfer it into a medium sized bowl.
  • Combine the grated carrots, chopped cilantro, and green chillies in the same bowl.
  • Whisk some yogurt and combine it into the bowl.
  • Add salt, sugar, freshly ground black pepper, crushed peanuts, and mix everything well.

Notes

  • Adding a pinch of salt into grated radish for 10 minutes will help to release the water from the radish.
  • Squeezing out the water from the radish will keep the raita thick, creamy, and tasty.
  • Combining full fat yogurt or greek yogurt makes the raita taste heavenly - but you can add any kind of plain yogurt.
  • Adjust the spiciness, salt, and sugar according to your taste.
  • You can skip adding crushed peanuts into the recipe for a nut-free option.
  • Adding Serrano peppers instead of green chillies gives an amazing taste to the dish as well.
