Ingredients

  • 2 medium Sweet Potatoes 1 lb
  • 2 tsp Cornstarch * see notes
  • 1/2 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Black pepper powder freshly ground
  • 1/2 tsp Parsley flakes
  • 1/2 tsp Salt or as required divided
  • 2 tbsp Oil * see notes

Instructions

  • Thoroughly clean the sweet potatoes to remove any dirt from them. Pat them dry with a kitchen towel.
  • Cut both the ends of the sweet potato and discard them. Slice the sweet potato from the middle lengthwise into 2 halves.
  • Lay the flat side of the half potato down, working lengthwise, slice off ¼ inch thick pieces, and continue cutting the sweet potato in the same manner.
  • Next, cut the slice into thin fries by cutting it into a ¼ th inch wide. Finish cutting the rest of the sweet potatoes in the same way and set the fries in a large mixing bowl.
  • Line a baking tray with a parchment paper and preheat the oven to 425°F (220ºC)
  • In a small bowl, combine corn starch, garlic powder, paprika, black pepper powder, and half of the salt. Mix everything well and toss it with sweet potato fries.
  • Next, drizzle some oil on the fries and toss until they are evenly coated in oil.
  • Transfer the fries to a baking tray in a single layer without overcrowding them.
  • Bake the fries for about 18-20 minutes and flip them with the help of a spatula.
  • Transfer the baking tray to the oven and bake the fries for 12-15 minutes or until the fries are crispy. Keep an eye on them as they might be done in less time.
  • Take the fries out of the oven and let them sit in the same pan for 5-8 minutes.
  • Sprinkle the rest of the salt and some more seasoning if you like when the fries are still warm. Serve them immediately with your favorite dipping sauce.

Notes

  • Cut your fries equally about ¼ inch wide and ¼ inch thick. Thinner fries tend to be baked crispier than the thicker ones.
  • Add some rice flour or tapioca starch instead of cornstarch in the recipe to make the fries crispy.
  • A high smoke point oil is considered 400°F and higher. When an oil is cooked beyond its smoke point it can impart a burnt and bitter taste to the food. Also, the fats break down and some of their nutritional qualities are compromised. You can use refined oil like canola oil, corn oil or avocado oil for this recipe.
  • Make sure to use a parchment paper which can withstand 425°F baking temperature. This will help the fries to cook evenly, prevent them from sticking, and turn super crispy.
  • Overcrowded fries will stick to each other and will not turn crispy. Arrange them in a single layer without overlapping each other for crispier fries.
  • Let the fries sit in the baking tray for about 5-8minutes to make them more crispy.
