Instructions
Peel the pumpkin and chop it into cubes. Cook the cubes in the pressure cooker for 3 whistles or steam them for 10-12 minutes. Let them cool down.
In a tempering ladle or small skillet, heat some ghee. Add jeera, let it splutter, and add finely chopped green chili. Keep aside.
Remove all the water from the cooked pumpkin and mash it well. Add roasted crushed peanuts, salt, sugar, and creamed dahi.
Add tempering and coriander leaves. Mix everything well.
Notes
You can cook the pumpkin in a pressure cooker without adding any water.
You can cook the pumpkin in the microwave for about 3-4 minutes by adding 1 tbsp water.
Remove all the water from the pumpkin before adding salt and dahi.
Add salt, sugar, and dahi just before serving, or prepare it half an hour before, and refrigerate until you serve.
