Pumpkin Raita – Bhopalyache Bharit

Pumpkin raita is a creamy, flavorful, and simple dish. This raita is called bhopalyache bharit in Marathi. You can make so many dishes with this beautiful variety of squash. Pumpkin raita can be served as a side dish along with some rice and roti.

It is a very creamy, sweet, sour, and mildly spicy raita recipe. Pumpkin raita is very quick and easy to make. It is a very flavorful side dish or dip to enjoy with some dry sabzi and rice.

This is my mom’s traditional recipe. When I was little, I always adored the color and flavors of the bharit so much. My mom used to prepare koshimbir, bharit, salad, or raita everyday in the evening as a side dish with variations. This was our usual side dish once in 10-12 days. 

Pumpkins are nutritious, low in calories, but high in vitamins and minerals. Pumpkins can be easily incorporated with many desserts, soups, salads, sauces, and preserves. 

Including pumpkins in your diet can reduce the chances of low blood sugar levels, reduces the risk of cancer, and is great for weight management. Pumpkins are loaded with antioxidants, fiber, and vitamins.

Pumpkin is a very quick and easy to cook. You can simply discard the peels by using a sharp knife and cut it into medium size pieces. Cook the pumpkin in a pan by covering with a lid, stirring frequently. It will take about 12-15 minutes.

I have used an Indian pressure cooker while making the plain white rice for lunch. You can do so in an instant pot as well. Make sure to use like these stackable steel containers in a pressure cooker.

Ingredients

  • Pumpkin
  • Coriander
  • Green chilis 
  • Dahi/Yogurt
  • Roasted peanuts
  • Cumin/Jeera
  • Salt
  • Sugar
  • Ghee  

Pumpkin Raita/Bhopalyache Bharit Step by Step Recipe

Peel the pumpkin and chop it into cubes. Cook the cubes in a pressure cooker for 3 whistles or steam them for 15 minutes. Let them cool down.

In a tempering ladle or small skillet, heat some ghee. Add jeera, let them splutter, and add finely chopped green chili. Keep the tempering aside till it cools down a little. 

Remove all the water from the cooked pumpkin and mash it well. Add roasted crushed peanuts, salt, sugar and creamed dahi. You can add dahi into the mixture and gently make small circles on the top with the help of a spoon.

Add tempering and coriander leaves. Mix everything well.

How To Store Pumpkin Raita?

Pumpkin raita tastes best when you eat it fresh. After a few hours it starts releasing some water so it may taste watery. 

Refrigerate the pumpkin raita if you have any leftover in an airtight container for not more than one day. 

If you need to make it ahead of time, cook the pumpkin, discard the water from them, add some crushed peanuts, and tempering. Do not add dahi, salt and sugar until it’s time to serve.

How To Serve Pumpkin Raita? 

Serve the raita along with your regular meal like daal, rice, roti, and curry as a side dish.

It is also well known for a vrat recipe. You can serve the pumpkin raita as a side with sabudana thalipeeth, sabudana khichadi, ratalyacha(sweet potato) kees, and vrat ka chawal(bhagar/samo rice)

Ingredients
  

  • 1.5 cup Pumpkin cubed
  • 1 tbsp Coriander leaves/Dhania patta chopped
  • 1 Green chili finely chopped
  • 2 tbsp Dahi/Yoghurt
  • 2 tsp Roasted peanuts crushed
  • 1/2 tsp Cumin seeds/Jeera
  • 1/4 tsp Salt or as required
  • 1/2 tsp Sugar
  • 1/2 tsp Ghee

Instructions
 

  • Peel the pumpkin and chop it into cubes. Cook the cubes in the pressure cooker for 3 whistles or steam them for 10-12 minutes. Let them cool down.

  • Remove all the water from the cooked pumpkin and mash it well. Add roasted crushed peanuts, salt, sugar, and creamed dahi.
  • Add tempering and coriander leaves. Mix everything well.

Notes

  • You can cook the pumpkin in a pressure cooker without adding any water.
  • You can cook the pumpkin in the microwave for about 3-4 minutes by adding 1 tbsp water.
  • Remove all the water from the pumpkin before adding salt and dahi.
  • Add salt, sugar, and dahi just before serving, or prepare it half an hour before, and refrigerate until you serve.
