In a small bowl, soak some frozen green peas for 5-10 minutes and wash them. Now crush them in a mini chopper.
Take a pan and add ¼ tsp of oil and sauté green peas for 2-3 minutes and set aside.
In a large mixing bowl, mash pressed tofu, add cooked quinoa, garlic cloves, onion, carrot, coriander leaves, green peas, cayenne pepper, black pepper powder, salt, and sriracha sauce. Mix everything well.
Add ½ cup of breadcrumbs to the mixture. You can add a couple of tablespoon breadcrumbs if needed. Mix everything well. Cover it with a plastic wrap and let it sit in the refrigerator for 45 minutes to 1 hour.
Grease your hands with a few drops of oil and take some mixture and form into a round shape and then press it to form a patty shape - make 10 patties out of this mixture.
Heat a griddle on a medium heat. Then, lower the heat and add 1 tbsp of olive oil. Spread it with the spatula.
Transfer the patties to the hot griddle. Do not over crowd them - it becomes hard to turn them. Drizzle one tbsp of olive oil over the patties.
Cook the patties on low-medium heat for about 4-5 minutes and turn them with the help of two spatulas, patties will not break with this method.
Cook the other side for 3-4 minutes or until it turns golden brown. Turn them again and cook for another 1 minute and set aside.
