Avocado Veggie Sandwich

This avocado veggie sandwich is very simple, healthy, and delicious! It makes a perfect lunch or dinner recipe in under 20 minutes. Avocados are loaded with good fats which are needed to keep our heart healthy.

I am a big sandwich eater. What about you? 

Avocado veggie sandwich is one of my favorite sandwiches. Creamy avocados, sautéed veggies, and some cheese is just amazing. It is a quick and super easy recipe that can be customized in different ways.

A perfectly ripe avocado tastes great on its own but when combined with lime juice, jalapeño, and garlic over a crusty bread – it is totally satisfying. No need to add any butter in the recipe as avocados are so buttery and creamy on their own. 

How To Pick Fresh Avocados? 

  • Check the outside color of the skin of the avocados – some of them are darker in color than others, these may be riper than fresh avocados with lighter skin.
  • You can tell how ripe an avocado is by gently pressing into its skin with your palms. If the avocado is firm and does not budge, you will need to let it ripen for a few days before eating it. 
  • Unripe green or firm fruit can take 3-5 days to ripen at room temperature depending on the temperature in your kitchen. 
  • If they begin to yield to gentle pressure, place them in the refrigerator to slow the ripen process until ready to use. 

I normally buy a few avocados almost ripened and some rock hard. So I can immediately use the ripen ones in 1-2 days in the recipe and let the other half ripen on my kitchen counter for the next recipe.

Avocado Sandwich

Ingredients

  • Avocado
  • Cilantro
  • Lime
  • Jalapeño
  • Garlic
  • Red onion
  • Tomato
  • Yellow pepper
  • Red pepper
  • Iceberg lettuce
  • Chilli flakes
  • Salt
  • Olive oil
  • Mozzarella cheese
  • Artisan rolls

Avocado Veggie Sandwich Step By Step Recipe

Sautéing The Veggies 

Slice the ¾ onion and bell peppers lengthwise. 

In a pan, add 1 tsp oil, onions, and roast them over medium heat until they turn translucent.

Now, add bell peppers and sauté everything together for about 3-4 minutes or until you see brown spots on them.

Remove it from the heat, add ⅛ tsp salt, and chili flakes. Mix well and set aside.

Avocado Spread

Wash the avocados, peel them, and take out their pulps into a large bowl. Mash the pulps using a fork or with your fingers.

Add ¼ diced onion, tomato, jalapeño, cilantro, garlic, lemon juice, salt, and mix it well. Combine cheese in the mixture and set aside.

Preparation

Assemble Sandwich

Warm up the bread in the oven or over the skillet. You can skip this step if you wish.

Spread the avocado mix on both sides of the artisan bread. Start layering the bottom slice with iceberg lettuce and next, add sautéed veggies.

Top off with the remaining half side of the bread, cut it in the middle, and serve.

Variations

  • Skip adding cheese in the avocado spread if you don’t want to.
  • Spread some hummus on both sides of the bread to add some plant based protein.
  • You can add Serrano peppers for more spicy flavor in the sandwiches.
  • Roast the onion and peppers in the pre-heated oven to 380℉ for 10-12 minutes flipping halfway through.
  • Skip adding sautéed veggies and add sliced tomatoes. 
  • You can add grilled zucchini, bell peppers, and onions as well in the recipe.
  • Use some different kind of bread like sourdough, multigrain bread, or wheat and oat buns. I like to use something thick and grainy to hold up the avocado spread and veggies.
  • You can enjoy the sandwich as an open faced sandwich on whole wheat french bread as well.

How To Store Avocado Veggie Sandwich?

Avocado veggie sandwiches taste best when freshly made.

Individually wrap the sandwiches with a plastic wrap and store them in the refrigerator for 1 day. Let them come to room temperature on a kitchen counter before consuming or microwave them for 15-20 seconds.

Prepare the sautéed veggies and store them in the refrigerator in an airtight container for 4 days. 

Dice the avocado spread ingredients (except the avocados) and store them in the refrigerator for 1 day. Add them to the freshly mashed avocados before assembling the sandwiches to save time.

How To Serve Avocado Veggie Sandwich?

Serve the avocado sandwiches with some fries, wedges, zucchini bites, or chips and some pickled jalapeño.

Serve these sandwiches along with some soup and fries.
