Cauliflower Curry is a delicious and flavorful Indian dish. It is made with cauliflower florets, onions, tomatoes, ginger, yogurt, and some heartwarming Indian spices. This curry is so easy to make and comes together in no time! 

This cauliflower curry makes an ultimate comfort meal to enjoy with some rice or roti. It makes a perfect weeknight dinner recipe in our house. Hope it will become one of your family favorites as well. 

Curry and roti is a staple food in various regions of India. This meal is prepared almost everyday in my home. I make this curry in a constant rotation as it is so quick and extremely flavorful with aromatic spices. 

Cauliflower curry is a healthy meal option, is packed with nutrients, and is low in calories. Cauliflower absorbs the flavors and gives a beautiful texture to the curry. The sauce of the curry is so simple and you can easily add in some other veggies like green peas, potatoes, or carrots if you wish. 

Cauliflower is a versatile vegetable, containing almost all vitamins and minerals you need. It is very easy to include in your diets in various ways and can replace high carb foods in several recipes.

Ingredients 

  • Cauliflower
  • Onions
  • Ginger
  • Green chili
  • Coriander leaves
  • Tomato puree
  • Yogurt
  • Cumin seeds
  • Asafoetida
  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • Cumin powder
  • Kitchen king masala
  • Salt
  • Oil

Cauliflower Curry Step By Step Recipe

In a pan, heat some oil, add cumin seeds, and let them splutter on medium low heat. 

Next, add asafoetida, ginger, green chillies, onions, and sauté them for 1 minute.  

Add coriander powder, cumin powder, turmeric powder, chili powder, and roast them for about 30 seconds. 

Process

Transfer ¼ cup tomato puree, salt, and mix well. 

Next, add 2 tbsp of water, yogurt, and mix it well. Close the pan with a lid and let the gravy cook for about 5 minutes or until it releases the oil. 

Add 3-4 tbsp of water, coriander leaves, and let the gravy cook for about 3-4 minutes. 

Transfer the cauliflower florets, mix everything well, and cover the pan with a lid. 

Cook the cauliflower florets for about 12-15 minutes, stirring occasionally. 

Process

Next, add 1 tsp kitchen king masala, mix, and cook for another 1 minute. Garnish with some coriander leaves and serve.

Tips For Making Cauliflower Curry

  • Use fresh cauliflower for this recipe to achieve the best taste and texture.
  • Cut the cauliflower pieces into equal bite sized pieces to ensure better and even cooking. 

Variations

  • You can add some other veggies like potatoes, green peas, and carrots as well. 
  • Feel free to add 2-3 crushed garlic cloves in the curry. 
  • If you want the curry to be more spicy, you could add some more spices as per your taste. 
  • I have used a ready-made tomato puree to give a very beautiful color to the dish. You can use 1 large fresh tomato puree in the recipe. Make sure to cook the tomatoes very well before adding the rest of the ingredients for about 7-10 minutes.
  • I love adding Kitchen King Masala in this curry but simply swap it with ½ tsp of garam masala or curry powder.
  • You can add some coconut milk for making it a vegan recipe instead of yogurt or some heavy cream.  

How To Store Cauliflower Curry?

Cauliflower curry can be stored easily in the refrigerator for up to 4 days in an airtight container. 

You can store the curry in the freezer safe container for 2 months. After thawing the curry the texture will change a little. Reheat the curry in the microwave safe bowl, stirring after every 1 minute until it becomes piping hot.

How To Serve Cauliflower Curry?

Serve the cauliflower curry with a roti, naan, or plain paratha

This curry goes really well with jeera rice or plain basmati rice along with some Green Split Peas Dal or Spinach Dal

  • 1 medium Cauliflower florets
  • 1 medium Onion diced
  • 1/2 inch Ginger finely chopped
  • 1 medium Green chili finely chopped
