Peanut Butter Oatmeal Bites

These peanut butter oatmeal bites are a no-bake, quick, and easy healthy snack. They are made with 6 simple ingredients and take less than 10 minutes to put together. Protein packed energy bites are perfect for post workout or a mid afternoon treat.

The healthy peanut butter oatmeal bites are loaded with fiber, healthy fats, and protein which keeps you satisfied for a long time. These bites are made by using honey and chocolate drizzle for that perfect sweetness. You can completely skip making a chocolate drizzle and combine chocolate chips in the recipe.

Chocolate is one of the most popular foods in the world. This delicious treat gives us the “feel-good” factor and can elevate our mood. Chocolate, peanut butter, and coconut make an incredible combination to snack on. 

Chocolate Peanut Butter Balls

There are several ways to make these delicious energy bites and you can make them  according to your dietary needs. Make these vegan friendly by adding maple syrup and vegan chocolate chips in the recipe. For a sugar free recipe, simply skip regular chocolate chips and add sugar-free chocolate chips.

Always use fresh ingredients for this recipe as each ingredient really enhances the taste of these energy bites.

Peanut Butter Oatmeal Bites Step By Step Recipe

Place 1 cup of oats in a high speed blender and grind until it turns into flour.

In a large mixing bowl, combine peanut butter, honey, ground oats, rolled oats, and 2 tbsp coconut. 

Preparation

Mix everything well with a rubber spatula until all the ingredients are combined. Use your hands to make the dough. 

Line a baking pan with parchment paper and set aside. 

Divide the dough into 12 equal sized balls, roll each ball into the leftover coconut, and place it on a baking tray. 

If you are using chocolate drizzle, add chocolate chips into a microwave safe bowl, microwave it for 1 minute, and mix well.

Combine coconut oil in the bowl, microwave it for 30 seconds, and mix well. 

You can use the double boiler method for melting chocolate as well. Place a saucepan on the stove and add 2-3 inches of water. Place a heat safe bowl over the pan. The bowl should fit over the pan. Add chocolate chips, coconut oil, and stir it until it melts down.

Drizzle the melted chocolate over the prepared balls with a spoon. You can dip the balls into the melted chocolate and sprinkle some shredded coconut over them.

Leave the balls on the countertop until melted chocolate reaches at room temperature or refrigerate until the chocolate sets.

Tips For Making Peanut Butter Oatmeal Bites

  • Use a relatively fresh jar of peanut butter, old peanut butter gets very dry and hard. Mix the peanut butter with a spoon before using it in the recipe.
  • As we are using all the ingredients raw, make sure to use fresh rolled oats and coconut for this recipe.
  • Old fashioned rolled oats work the best for this recipe. I would not recommend using steel cut or instant oats.
  • Honey adds a perfect sweetness and helps to bind the energy bites.

Variations

  • You can use almond butter instead of peanut butter in this recipe.
  • I like to bite on some oats so do not grind them all into powder if you would like the same. You can powder the total amount of oats if you wish. 
  • If you don’t like to add shredded coconut, you can skip it. You can use sesame seeds or chia seeds instead as well. 
  • Skip adding chocolate drizzle and combine the chocolate chips in the mixture before forming the balls.
  • Use vegan or sugar free chocolate chips as per your dietary needs. Chop up the chocolate bar into pieces and melt the chocolate.
  • Add butter or ghee instead of coconut oil while melting the chocolate for making a drizzle.

How To Store Peanut Butter Oatmeal Bites?

These energy bites can be stored at room temperature for 5-6 days. 

Store the bites in the refrigerator if you want to keep them for a long time in an airtight container for up to 2 weeks.
