Bhel puri is a classic street food which is very popular in every state of India. There are a few other names for bhel puri like Jhalmuri, Churumuri, or Bhela in different states. It is loaded with sweet, tangy, and spicy flavors. This delicious chaat recipe is made with puffed rice, sweet and spicy chutneys, and some crunchy mixture. 

This bhel puri recipe is very versatile and can be made in various ways as per your likings. It can be made by omitting the fried farsan mixture and adding some moong sprouts for a healthier version.

This recipe makes a perfect evening snack to enjoy with some chai. You can make either sukha bhel puri by skipping the chutneys and geela bhel by adding the chutneys in the recipe. My personal favorite is geela bhel with raw mango green chutney. 

Whenever raw green mangoes are in season, I like to make bhel puri’s green chutney in bulk and store it in the freezer in smaller portions. I love to add a few pieces of raw mangoes for that awesome tangy flavor in my bhel puri. If raw mangoes are not available, you can use lemon or lime juice instead.

My father used to take us once a month to enjoy the street food on the beach, which was within a walking distance from my home. We almost tried each and every vendor’s chaat recipes in our area. When I started going out with my friends, we went to different places outside our local area to enjoy chaat.

On the streets of Mumbai or on the beaches, there were ample of chaat vendors, and each of them had their own variations of bhel puri. Bhel puri or any chaat recipe is best enjoyed on the street stalls of India but it is very easy to make it home as well. 

Ingredients

For Bhel Puri Mix:

  • Puffed rice
  • Potato
  • Red onion
  • Tomato
  • Raw green mango
  • Lime 
  • Coriander leaves
  • Pomegranate
  • Masala peanuts
  • Farsan mixture
  • Thin sev
  • Chaat papdi
  • Chaat masala
  • Tamarind date chutney
  • Green chutney

Prepare all the ingredients ready to make this bhel puri recipe in under 10 minutes.

You can buy tamarind chutney from any Indian store as well.

Boil the potatoes, peel them, cut them into cubes, and keep them ready. Chop the rest of the ingredients in separate bowls and set aside. 

I have used a store bought farsan mixture, sev, and papdi. You can easily buy masala peanuts from the stores as well.

For Green Chutney

In a grinding jar, blend together the green chutney ingredients by adding 1-2 tbsp water, and set aside. 

For Bhel Puri Mix

In a large pan, add puffed rice/murmura, and roast it for 5 minutes to make it crispy on a low heat. Roast it for a few minutes before making bhel puri and let it sit at room temperature to cool down.

In a large mixing bowl, add roasted puffed rice, chaat masala, masala peanuts, mixture, crushed papdi, sev, cubed potatoes, tomatoes, onions, coriander, some raw green mangoes, pomegranate seeds (arils), coriander leaves, and toss everything together. 

Combine green chutney, tamarind date chutney, and some lime juice. Adjust the chutneys and chaat masala according to your taste. 

Toss everything well, serve it immediately. You can top it up with some raw green mango pieces, sev, and papdi.

Tips For Making Bhel Puri Recipe

  • Roasting the puffed rice/murmura helps remove any moisture and makes them crispy.
  • It is very important to make the green chutney a little spicy so you will add less quantity to control the moisture in the bhel and get that perfect spice in the recipe.
  • If raw green mangoes are not available, you can simply add more lime or lemon juice in the recipe.
  • Dilute the tamarind date chutney with some water if it is very thick. Thicker tamarind date chutney makes bhel a little sticky.
  • Serve bhel puri immediately or it will turn more soggy and soft.

 Variations

  • You can add 2-3 tsp lime juice or lemon juice while making a green chutney instead of raw green mango.
  • Skip adding mixture in the bhel puri and increase the quantity of sev.
  • Spicy peanuts taste amazing in the recipe but you can skip adding them. You can simply add roasted peanuts. 
  • Sprouted moong beans can be added in the recipe – skip the mixture and fried papdi to lower the fat level.

How To Serve Bhel Puri?

Bhel puri is a great option to take with you for picnics or backyard parties. Make sure to pack all the ingredients separately in small boxes and assemble the bhel puri just before serving. 

It can be served as an evening snack with some chai or coffee.

  • 4 cups Puffed rice/Murmura
  • 1 large Potato boiled, peeled, and cubed
  • 1 medium Red onion diced
  • 1/2 large Tomato deseeded and diced

  • 5-6 Green chillies
  • 1/4 inch Ginger
  • 1 tbsp Raw green mango chopped
  • 2.5 tbsp Roasted dalia split
  • 1/4 tsp Black salt
  • 2-3 Ice cubes
