Savory Zucchini Bread

This is the best and easiest savory zucchini bread recipe ever! It is a very tasty and delicious bread made with zucchini, yogurt, mozzarella cheese, semolina, and a few spices. It makes a perfect breakfast, snack, appetizer, or side dish with any meal.  

There is no need to use any fancy equipment or kneading to make this savory zucchini bread. This is a simple one bowl recipe and can be made in under an hour. You can simply combine all the ingredients together and bake a bread loaf or muffins in the oven.Ā 

Zucchinis add moisture in the bread and semolina gives it that perfect texture. Yogurt and mozzarella cheese makes the bread soft and delicious. A melody of spices gives a divine taste to the bread. Hope it will soon be one of your family’s favorites like mine šŸ™‚ 

I have made this bread in the past using cottage cheese. It worked so well but needed 5-8 minutes extra to bake. Sharp cheddar cheese works beautifully in this bread.

Savory Zucchini Bread Step By Step Recipe

Line an 8 x 4 inch baking pan with parchment paper and set aside. 

Preheat the oven to 350ā„‰/180ā„ƒ 

In a large mixing bowl, add all the ingredients and gently mix the batter together. 

Add 3-4 tbsp water (if required), mix together, and transfer the batter into the baking pan. 

Spread it evenly with a rubber spatula, sprinkle some sesame seeds and chili flakes on the top. 

Bake the bread for 35-40 minutes. Insert a toothpick in the center and it should come out clean.Ā 

Let the bread cool in the pan for 5 minutes and transfer it to a cooling rack. 

Allow the bread to cool completely before slicing into pieces.

  • Do not squeeze out the water from the zucchini since it helps keep the bread super moist.
  • The zucchini bread batter should be thick, it should not be runny, and add water if needed. If the zucchinis have more liquid in them you may not need to add any water.
  • Use thick yogurt or greek yogurt in this recipe to make the bread more tasty. If you use low fat yogurt, you may not need to add any water in the batter.

Variations

  • Add some grated carrots for an extra dose of veggies in this recipe.
  • Garlic gives an amazing taste to the bread. Skip adding garlic if you wish. 
  • You can skip adding coriander and cumin powder into the batter. 
  • Add low fat yogurt if you like, in that case adjust the water consistency accordingly. The batter should be thick and not runny or it will take more time to bake the bread.
  • Sharp cheddar cheese tastes very delicious as well in this recipe.
  • You can add cottage cheese instead of yogurt and mozzarella cheese. It will take 5-8 more minutes to bake the bread.
  • Cut the bread into slices or small bite sized cubes for serving as an appetizer. 
  • Bake the batter into a muffin pan to make a great breakfast option.

Take out the required portion and warm the bread for 5 seconds in the microwave and enjoy. Let the bread sit on the countertop for 20 minutes before consuming.

    The flavor was outstanding but I couldnā€™t get them to cook through, instead of using yogurt/mozzarella I used blended cream cheese 1/2 cup, 2 T sour cream because it seemed very dry after squeezing the liquid out of zucchini,,, just wondered thoughts?
