Beautiful Mediterranean flavors are loaded in these tofu lavash wraps. You can easily prepare the ingredients in advance and wrap them together in warm lavash wraps for a satisfying meal. These tofu lavash wraps are so easy to make and are ready in under 30 minutes.

These tofu lavash wraps come together very quickly and will keep you full for a longer period of time. The spicy hummus, creamy avocado, flavorful veggies, tofu, feta cheese, and some sweet cranberries are combined to make them healthy and delicious! 

The tofu lavash wraps are filled with protein packed hummus, feta cheese, and tofu which have absorbed the amazing mediterranean flavors. Roasted onions and peppers add some crunch to the dish. The salty taste of feta cheese and sweetness of dried cranberries divinely pleases taste buds.

Some creamy avocado and spicy hummus helps to seal the tofu lavash wraps perfectly. Additionally, avocados add some healthy fats, butteriness, and creaminess in the wraps. 

At our home, we enjoy these protein rich tofu lavash wraps so much and make them very frequently. It was my husband’s idea to add some dried cranberries in the recipe to make them more interesting, which makes them taste incredible. Tofu Lavash Wraps

There are endless possibilities to make these tofu lavash wraps. You can include sliced cucumbers, olives, spinach, pickles, roasted peppers, and many more according to your preferences. The beauty of the lavash bread is its rectangular shape which lets you load a lot of filling without falling apart! 

What Is Lavash Bread?

Lavash is a flat, thin, and soft flatbread which can be folded easily for wraps and sandwiches. It is a Middle Eastern rectangular flatbread made by using less oil, sodium, and without yeast. 

It is a very healthy, versatile, and rectangular shaped bread that makes it easier to fit in lots of stuff inside when you are making the wraps. 

Ingredients

  • Lavash bread 
  • Hummus

Filling:

  • Tofu – Extra firm
  • Red onion
  • Mixed bell peppers
  • Red chili powder
  • Cumin powder
  • Onion powder
  • Garlic powder
  • Black pepper
  • Oregano
  • Parsley 
  • Lime juice
  • Salt
  • Olive oil

Avocado Spread: 

  • Avocado
  • Cilantro
  • Garlic
  • Lime juice
  • Salt

Tofu Lavash Wraps Step By Step Recipe

Pressing The Tofu 

Take one block of tofu, wrap it in a paper towel or kitchen towel, and sandwich it between two plates, keep some heavy object on the top for 20 minutes – I have used an iron skillet and a heavy food packet.

Remove as much water as possible by pressing the tofu and slice it into thin stripes. 

Filling

Heat some oil in the skillet on medium heat, add sliced onions, and sauté for 2 minutes.

Next, add tofu strips, all the spices, salt, and cook for about 2 minutes. 

Transfer the mixed peppers and cook for about 2-3 minutes to keep them tender and crunchy.

Squeeze around 1 tsp lime juice, mix, and set aside.

Avocado Spread

In a bowl, mash 2 avocados, add some cilantro, and chopped garlic. Squeeze some lemon juice, salt, mix together, and set aside.

Assembling

Heat the lavash bread directly on the stovetop with the help of tongs. 

Generously spread spicy hummus on the warm bread. 

Scoop out some avocado spread equally on the lavash bread. 

Add some sliced grape tomatoes, dried cranberries, and sprinkle some feta cheese. 

Divide the tofu filling on the warm lavash bread equally in the center and sprinkle some more feta cheese. 

Process

Gently roll up pushing the ingredients down with your fingers to make the wrap as tight as possible. You can cut the wrap in half and serve! 

Tips For Making Tofu Lavash Wraps

  • Using extra firm tofu is very important to retain its shape in the recipe. 
  • Pressing the tofu with some heavy object helps to take away all the moisture quickly from the tofu. 
  • Cooking the veggies tender and crunchy is very important while making the filling.

Variations

  • Skip on making avocado spread and add some diced avocados. 
  • Cut the tofu into bite sized pieces.
  • Adjust the spice level according to your taste. 
  • Some lettuce or spinach leaves can be added after spreading hummus and avocado spread. 
  • Add some cucumber slices or diced cucumber without seeds to minimize the moisture in the wraps if carrying in the lunch box.
  • Combine some regular diced tomatoes without seeds to keep the wraps less moist for a long time. 
  • You can skip on adding cranberries in the recipe.
  • For a dairy free option simply skip adding feta cheese in the wraps. 
  • Add some olives, pickles, or roasted peppers if you wish. 
  • If lavash bread is not available then use pita bread and the stuffing into the pockets or use naan bread for this recipe.

How To Store Tofu Lavash Wraps?

Prepare the tofu veggie filling ahead of time and store it into an airtight container for 4 days in a refrigerator. 

Buy a store bought spicy hummus or prepare homemade one ahead of time. 

You can store avocado spread in an airtight container for 1 day in a refrigerator. I highly recommend making it fresh for the best flavors. 

Reheat the veggies and tofu in the skillet before assembling into a warm lavash bread. 

Tofu lavash wraps can stay fresh for 4-5 hours in a lunch box. 

It makes a perfect meal prep recipe for busy weekdays.
